Pumpkin Pancake Recipe (Martha Stewart)
INGREDIENTS
1 1/4 cups all-purpose flour
2 tablespoons sugar
2 teaspoons baking powder
1/2 teaspoon cinnamon
1/2 teaspoon ground ginger
1/2 teaspoon salt
1/8 teaspoon nutmeg
1 cup milk
6 tablespoons pumpkin puree
2 tablespoons butter, melted
1 egg
Powdered sugar
2 tablespoons sugar
2 teaspoons baking powder
1/2 teaspoon cinnamon
1/2 teaspoon ground ginger
1/2 teaspoon salt
1/8 teaspoon nutmeg
1 cup milk

DIRECTIONS
- In a bowl, mix together flour, sugar, baking powder, and dry seasonings.
- In a separate bowl, whisk together milk, pumpkin, butter, and an egg. Fold the mixture into the dry ingredients.
- Place a skillet over medium heat, and spray with nonstick cooking spray. Pour 1/4 cup of the batter into the center of the skillet, and cook about 3 minutes on each side until done. Serve warm with powdered sugar and maple syrup.
